empanadas?
anyone have any recipes for empanadas (to hold me over until the Syliblond gives me her dads! )

they just had a news thing on empanadas on Channel 7 for the weekly Annual Eats review... they might have some recipes on their website. This restaurant in Corona makes over 25 different kinds!!

Here is one I love
Empanadas
10 white Goya discos 1 lb of chopped meat 1 clove garlic 2 slices onion diced small 1/4 green pepper diced small 1/4 red pepper diced small a few olives (sliced with pimento) 2 packets Accent Sazon con Culantro y achiote 1 packet Goya chicken broth powder onion powder (good sprinkle to cover lightly) Goya Adobo (good sprinkle to cover lightly)
Thaw out the Discos one hour before you start
Place the chop meat in a large skillet with the heat on medium
Add Garlic, Onions, Red & Green Pepper, and Olives
Stir until beef browns and juice develops (a few minutes)
Add the powdered ingredients, stir nicely, be sure every area is seasoned
Let heat a bit, let stand on low for a few minutes.
Turn the oven on to 350 degrees
Take the discos one at a time, scoop in two tablespoons of filling, placing in the middle of the discos. Fold over.
Fork the edges together, continue til done (you may have some meat left over not much though)
Spray a baking pan with Pam
Lay the empanadas in the pan
Cook for 10 minutes
Flip empanadas over and brown the other side, cook until each side is a light tan color.
Let cool a few minutes.

did you find the Discos easily??
were they in the frozen section of the supermarket?
i guess I could try Compare if my regular supermarket doesnt have them!!

Yes they are usually in the International section of the frozen dept. with the Goya stuff.
I notice sometimes they are all out though, like they do not watch thier stock on this very well
Both Stop n Shop and Super Walmart have both been out of discos at the same time when I was looking for them but they are available at those stores.
Sometimes I'll just buy them when I see them to have them!
