Enchillada Sauce Recipe?

Anyone have a good one?

When I was PG with DD Taco Bell had this awesome Grilled Stuffed Chicken Enchillada Burrito... IT WAS AMAZING! Neddless to say it was a limited time thing and I'd love to just make my own.

I use canned enchilada sauce. Mild or hot. I think it's the Old El Paso brand.

I make my enchiladas by making taco beef, mixing a container of sour cream with Mexican cheese blend and then smearing on a tortilla with some of the beef, roll it up, pour the sauce over it and sprinkle with more cheese. Bake till golden and bubbly!!! I also use this same method with shredded mexican chicken or beef.

my sauce on top of enchilladas:

2 cups of tomato sauce
chili powder 2 tsp
cinnamon 1tsp
texas pete as needed

in enchilladas:
chicken
broth
tomato paste
cumin
chili powder
