Escarole and Beans Recipe
Since my 89 year old grandmother is in a nursing home and can't show me how to make it.. (not like I will EVER be able to duplicate her recipe yummmm)
Does anyone have a good recipe for escarole and beans??

I do day day , I make it at least 2xs a week, Ilove it , ( SCAROLE & BEANS ) LOL
I usually buy 2 heads of the escarole, it wilts like spinach would...
really all u need is 2 heads of the escarole 1 large can of progresso cannellini evoo 1/2 head garlic salt...
I rinse & drain the escarole until all the sand is gone. sometimes it needs just once , but do it a few times in a collindar or stick a stopper in the sink & do it that way .. If you dont rinse it well it will be gritty from the sand..
slice very thinly the garlic, like paper thin, it depends on if u love garlic, i use a heavy hand with it. take about 3/4 cup of evoo & add the garlic & saute it . dont let it brown.
after thats done , put the heat on low, take the escarole & add to a big pot of water . let it boil & basically cook until its wilty. about a half hour.
diain the escarole good & then add that to the garlic & evoo.
raise the heat to warm the oil & mix that all with the escarole . IMO the oily & garlicy the better .
then drain the can of beans add that to the pan & cook for a few more min..
get a nice loaf of bread , which im sure you know that & enjoy....

I do something similar
I clean the escarole and place it in a deep pot with enough chicken or vegetable broth to cover the escarole then let that heat for about 10-15 minutes. I then add garlic, salt, pepper, and crushed red pepper to taste and allow that to simmer for a few minutes and then add the beans---let everything heat through and serve. You can top it with parmesan cheese when you serve it.

I usally make it by sauteing Garlic and Oil then I throw in the escarole chopped up to prefferred size salt and perrper then saute that a bit until it wilts, throw in a can of rinsed progresso cannelilini beans, crushed pepper to taste and either chicken broth or water to preference (if I am going to make it a soup I add more or for a side dish I add less)
Sometimes I will add little whole wheat ditallini macaroni's

I do something similar to what was posted above but sometimes I add sausage to the mix and serve it over pasta. YUMMY!
