Experienced Cooks..Can You PLEASE Suggest A Good Thanksgiving Vegeable Recipe For Me?

I am responsible for the Vegetable Dish. Anyone have anything GREAT and not TOO common?

PS. I'm TRYING to stay away from the sweet potato/sweet type of thing as I believe the host of the dinner is making that:)

Sweet Potato-Apple-Walnut Casserole:

3 medium sweet potatoes, peeled, cut into bite-size chunks
2 medium unpeeled apples, chopped 1/2 cup apple juice
1 tsp. ground cinnamon
1/4 cup PLANTERS Walnut Pieces

PLACE sweet potatoes in 13x9-inch baking dish sprayed with cooking spray.

TOSS apples with apple juice and cinnamon until evenly coated; spoon over sweet potatoes. Cover.

BAKE at 375°F for 45 minutes. Uncover; sprinkle with walnuts. Bake an additional 15 minutes or until sweet potatoes are tender.

Thanks SO much. I should have said before that I am trying to stay away from the sweet potato type of veggie as I think the host usually makes those:)

So any other ideas?

This is soooo good... but on the white trash side. It's a family recipe.

8-10 yellow squash
1 onion
1/2 stick butter
1 cup evaporated milk
1 can campbells cream of chicken soup
8 oz shredded cheddar
1 sleeve ritz crackers crushed

slice the squash into rounds (you can even use frozen squash) and dice the onion. Put both into pot, add water and boil for about 10 minutes or until slightly softened. Drain VERY well. Mix the rest of the ingredients together except the crackers. Mix in the squash. Pour into 9x13 pan. Cover the mixture with the ritz crackers.
Bake at 350 for 45 minutes.

Look up Brussel Sprouts Au Gratin. Quite involved but my family loves it. You can also sub any hearty green like fresh broccoli or fresh string beans.

How about Broccoli and Gruyer Au Gratin?
hmmmmmm, cheesy broccoli.

Ingredients
2 large bunches broccoli, roughly chopped (about 12 cups)
4 tablespoons butter (1/2 stick)
1/4 cup all-purpose flour
2 cups whole milk
2 cups grated Gruyere (8 ounces)
kosher salt and black pepper


1.Heat oven to 375° F. Fill a large saucepan with 1 inch of water and fit with a steamer basket (or fill a large pot with ½ inch of water). Bring to a simmer. Place the broccoli in the steamer basket, cover, and steam until just tender, 3 to 4 minutes; transfer to a large bowl.
2.Melt the butter in a medium saucepan over medium heat. Add the flour and cook, stirring, for 2 minutes (do not let it darken). Whisk in the milk and simmer until slightly thickened, 3 to 4 minutes. Remove from heat and stir in 1 cup of the cheese, ½ teaspoon salt, and ¼ teaspoon pepper. Toss with the broccoli.
3.Transfer the broccoli mixture to a shallow 3-quart baking dish and sprinkle with the remaining cup of cheese. Bake until bubbling and golden brown, 35 to 40 minutes. Let sit 10 minutes before serving.

Green Beans with Roasted Nuts and Cranberries:


Ingredients
kosher salt and pepper
1 1/2 pounds green beans, trimmed
2 tablespoons extra-virgin olive oil
1/2 cup roasted, unsalted mixed nuts, roughly chopped
1/4 cup dried cranberries

Directions
1.Bring a large pot of water to a boil. Add 1 tablespoon salt and the green beans and cook until tender, 4 to 6 minutes.
2.Meanwhile, in a large bowl, combine the oil, nuts, and cranberries.
3.Drain the green beans and transfer them to the bowl. Add 1/2 teaspoon salt and 1/4 teaspoon pepper and toss to coat. Serve warm or at room temperature.

This is my favorite veggie dish

Amazing Butternut Squash
Recipe from allrecipes.com
Prep Time: 20 Minutes
Cook Time: 40 Minutes
Ready In: 1 Hour
Yields: 6 servings

INGREDIENTS:
1 butternut squash- peeled,
seeded and cubed
1/2 cup mayonnaise
1/2 cup finely chopped onion
1 egg, lightly beaten
1 teaspoon brown sugar
salt and pepper to taste
1/4 cup crushed saltine
crackers
2 tablespoons grated
Parmesan cheese
1 tablespoon butter, melted


DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large pot, bring the squash to boil. Reduce to a simmer until squash is soft.
3.In a large bowl, mash the softened squash. Mix in the mayonnaise, onion, egg, brown sugar, salt and pepper. Pour the mixture into a 2 quart baking dish.
4.In a medium bowl, mix together crackers, Parmesan and butter. Sprinkle over the squash mixture.
5.Bake uncovered in the preheated oven for 35 to 45 minutes, until the topping is lightly brown.


I used 1 very large butternut squash and doubled all the ingredients to make 2 pyrex pie plates. I also quadrupled the recipe for the crumble on top. One cup of crushed saltines, 4 tablespoons of parmesan, and 4 tablespoons of melted butter. This way it covers the entire top of the dish.

If you want to go 'appetizer' style you can do stuffed mushrooms. My sister stuffs them with some combo that includes shredded wheat instead of seafood and they are delicious!

I think most squash dishes are good.. or maybe a nice mashed turnip/rutabaga dish would be good.

Artichokes with a nice Buerre Citron are a different kind of choice.. and really delicious too. But they do scare people if they don't know how to eat them.

Swiss and Vegetable Medley This recipe is slightly different than what I do......

(my recipe called for the Pimientos but they are not cheap and you can't even taste them in the dish)
2 bags Frozen Cauliflower/Broccoli/Carrot Vegetable Mix
2 Cans Campbell's Mushroom Soup
1 1/2 Cups Shredded Swiss Cheese
2 small or 1 large can French's Onions

Defrost and Drain frozen Veggies. Layer 2 cans of soup, 1 cup of cheese, and half of French's Onions in 9x11 Casserole. Bake at 350 for 30 minutes. Layer 1 cup swiss and 1 can onion rings and bake for a few more minutes to brown.

Serve Hot.

Paula Deen makes a seriously killer creamy corn recipe. It's heavy, but easy to make. It easy to find on food network's website.

OOO this is sooo yummy

Corn Cassarole:

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar
Directions
Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Yep, lemme dig it up when I get home. It's off of Food network, I just have to find it. I made it last year and everyone loved it. They even poured it on the mashed potatoes and mixed it in.

I do a "Roasted Greek Salad" every year:

- 2 or 3 Zucchinis
- 2 red peppers
- one large red onion
- 2 or 3 tomatoes
- feta cheese
- pitted calamata olives
- balsamic vinegar
- olive oil
- salt & pepper
- other seasonings


In a large baking pan, slice zucchinis, onion and peppers. Toss with Olive oil, salt, pepper and some of your favorite seasonings (recipe calls for thyme, but I don't like that) I used rosemary and oregano usually.

let that cook for about 1/2 hour 45 mins on 375.

Once veggies are almost cooked, add tomatoes, feta cheese, olives and balsamic vinegar.

Let that cook another 10 mins and then it's all done!

It's delicious and I make every year and everyone always loves it!

I make this recipe alot not just on holidays. It's so yummy and easy!! I usually triple the recipe since it only serves 4.

Roasted Carrots with Shallots

2 pounds carrots, cut into 3-inch lengths, thick pieces halved lengthwise
12 ounces shallots (about 10), peeled and halved lengthwise
2 tablespoons olive oil
coarse salt and ground pepper
1/2 cup fresh parsley leaves
2 tablespoons fresh lemon juice

Preheat oven to 450. On a large rimmed baking sheet, toss carrots, shallots, and oil; season with salt and pepper. Bake until tender, 30 to 35 minutes, tossing once halfway through. Add parsley and lemon juice; toss to combine.
