It would be easier to list cheese I don't like. I'm a total cheese head, but I HATE bleu cheese , gorganzola, anything like that. I actually don't really like fresh mozzerella that much ( I know, everyone thinks I'm nuts). My top faves are:

but for regular sliced cheeses I would have to say sharp cheddar
