My favorite cookies of all time are chocolate crinkle cookies:
Chocolate Crinkle Cookies
Ingredients: -1 Cup Unsweetend Cocoa Powder -1 1/2 Cups White Sugar -1/2 Cup Vegetable Oil -4 Eggs -2 Teaspoons Vanilla Extract -2 Cups All Purpose Flour -2 Teaspoons Baking Powder -1/2 Teaspoon Salt -Confectioner’s Sugar (For Dusting)
1. In a mixing bowl, sift together flour, baking powder, and salt. Set aside. 2. In the bowl of an electric mixer, beat together cocoa powder, white sugar, and vegetable oil until it comes together into a shiny, gritty, black dough. 3. Add the eggs, one at a time, mixing for 30 seconds after each addition. Add the vanilla and mix in thoroughly. 4. Slowly mix flour mixture into the chocolate mixture at low speed until just combined. Do not overbeat. Wrap dough in plastic wrap and chill overnight or for at least four hours. 5. Pre-heat the oven to 350 degrees and line two baking sheets with parchment paper. Place the confectioner’s sugar in a wide bowl or dish. Using a small scoop or rounded teaspoon, scoop out chilled dough and roll into 1 inch balls with your hands. Roll the balls in the confectioner’s sugar and place on cookie sheets. Bake for 10- 12 minutes. Allow to cool for a minute before transferring to wire cooling rack to cool completely.
So simple and delicious!
I bake a lot of roll out sugar cookies which can be great if you like to decorate- I use Sweet Sugarbelle's recipe and everyone always raves. They're great plain, decorated with royal icing, dipped in chocolate, whatever you like!
I also made red velvet roll out cookies for a holiday cookie exchange and they were fantastic!
Red Velvet Roll Out Cookies
*I made snowflakes but you can make any shape, even just round and drizzle with white chocolate!*
Ingredients: -1 Cup Unsalted Butter -1 1/2 Cups Confectioner’s Sugar -1 Egg -2 Tablespoons Red Velvet Emulsion* -1 Teaspoon Vanilla Extract -1 Tablespoon Dark Chocolate Cocoa Powder -1/4 Cup Melted Chocolate Chips (I used Semi-Sweet) -3 Cups Flour -1 Tablespoon Dry Buttermilk* -1 Teaspoon Salt -2 Teaspoons Baking Powder
*Note: Emulsions can be found at your local cake supply store. Check out The Sugar Room in Sunnyside, Queens, NY! Dry Buttermilk can be found in the baking aisle of your local supermarket, near the evaporated milk.
1. In a mixing bowl, sift together flour, baking powder, dry buttermilk, and salt. Set aside. 2. In the bowl of a stand mixer, cream together butter and sugar. Add egg, red velvet emulsion, vanilla, cocoa, and melted chocolate until thoroughly incorporated. 3. Slowly mix in flour mixture until dough pulls away from paddle and begins to form a ball. Wrap dough in plastic wrap and chill for at least 30 minutes. 4. Pre-heat oven to 400 degrees. Line a baking sheet with parchment paper. Roll out dough on floured surface about ¼ inch and cut out desired shape with cookie cutter. Bake about 7-9 minutes. Transfer to cooling rack to cool completely.
These cookies can be left plain or topped with royal icing!
Royal Icing
Ingredients:
-3 Tablespoons Meringue Powder -4 Cups Powdered Sugar, sifted -6 Tablespoons Warm Water
Beat all ingredients until icing forms stiff peaks, about 7-10 minutes with stand mixer, 10-12 minutes with hand mixer. Transfer to piping bag to decorate cookies.
*Note: If your icing is too thick, add water a little at a time to thin. If your icing is too thin, add powdered sugar a little at a time to thicken.
