Favorite thing to do with chicken cutlets?
Looking for new ideas. My fave is to mix spinach, feta cheese& mayo & put it in the middle of a pounded cutlet, roll it & cook it in a pan w/ evoo.

Mine is what DH and I call a "slacker recipe".
Throw frozen ones in a crockpot with a jar of salsa. Make some white rice and call it a dinner.

Cook up some garlic in oil. Dip the chicken in there and then in your breadcrumb mixture. Put the breaded chicken in a pan and pour the rest of the garlic/oil mixture over them. Bake until ready.
Mix mayo and parmesan cheese. Spread over cutlets and then bread them.
Mix ricotta, italian seasoning, parmesan cheese. Cut cutlets in half and fill with ricotta mixture. Put in pan and cover with sauce and mozzarella.
Roll chicken up with stuffing in the middle.

Marinate them overnight in either barbeque sauce or terriyaki sauce. Then grill them on the George Foreman

I put a piece of cooked bacon and a wedge of swiss in a rolled /breaded cutlet... I secure with toothpicks, fry and then bake

marinate them in Italian dressing & grill
dredge in Panko breadcrumbs & bake at 425.
cut up into chunks, combine to make chicken in broccoli in a soy sauce.
cut into strips & make a stir fry

I just tried thsi the other day and Dh loved it. Take perdue thin chicken cutlets, egg and put into seasoned bread crumbs, then take individual frozen asparagus spears and a piece of mozzarella cheese in the cutlet and roll up, spray pan with Pam, put a little olive oil on top, and bake at 350 about 45 minutes or until cooked thru.

Honestly, my favorite way to eat chix cutlets is breaded and fried - I know, not healthy, but it's one of my fave dinners .........

chicken cutlets are like a $5 *****...you can do anything to them and will be satisfied in the end
I love baking them with tomatoes, olives, feta cheese..
or
baking them with fresh tomato sauce, mozzarella and calling it a healthy parm..
straight up fried chicken cutlets with italian breadcrumbs, white rice, black beans and salad also works for me too.
since I don't like chicken on the bone that much, chicken cutlets are my savior.

I just made Campbell's cheesy chicken and rice bake... It was delicious. Def needs more seasoning though. Was a tiny bit bland. If you don't have ingredients on hand - skip the veggies and use a different "cream of" sauce.....
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked long-grain white rice
2 cups frozen mixed vegetables
1/2 teaspoon onion powder
4 boneless skinless chicken breast halves
1/2 cup shredded cheddar cheese
Directions 1Stir the soup, water, rice, vegetables and onion powder in a 12" x 8" shallow baking dish.
2Top with chicken. Season chicken as desired. Cover.
3Bake at 375 degrees for 45 minute or until done. Top with cheese.
4Serve with a green salad and bread of your choice.

chicken brushetta
chicken cutlets marinated overnight with garlic evvo, lemon jusice, s& p & oregano , take out & then bread crumbs & bake,, so tasty
chicken stuffed with spinach, panchetta & mozarella . fried & then cooked in chciken stock chicken with bow ties & sundried tomatoes , carrots & arugula

Usually chicken parm with angel hair pasta.
I also like to cut them up and stir fry with little garlic, peppers & onions and serve over rice.

i oven fry them on my pampered chef stone pans. i spray them with canola spray alot less fattening than frying and much easier clean up
