fellow vegetarians: im so proud of myself!

im so proud of myself, tonight i made my first totally animal free meal!

although this meal is easy and no big deal, it is to me because i NEVER cook! this is like the 2nd time in 3 yrs!

tonight i made:

-veggie dogs rolled in cresent rolls stuffed with vegan cheese (delish!)

(-side of mac n cheese, but thats nothing)

and for dessert

-chocolate pudding pie made with soymilk and gelatin free whipped topping


yay!

Congrats!!! Sounds YUMMY!!

I just stumbled on the yummiest vegan recipe that's soooooooo easy (I'm no cook either!):

Peel an eggplant and slice it...
Take some soft tofu and about 3 tablespoons of olive oil and blend it until it has a smooth consistency
Take the eggplant slices, dip in the tofu mixture and then dip in breadcrumbs
Place the breaded slices on a cookie sheet and bake in the oven at 450 degrees for 30-40 minutes until browned

I put my favorite red sauce on top (Rao's) and OMG, it's sooooooo freakin' yummy! Even my daughter loves it!

yum - i am a huge veggie dog fan. A good vegan cook book is The Voluptuous Vegan or Simply Vegan.

I've tried them all and the only ones I like are the morningstar ones... they taste just like the real thing. My 11-month old LOVES them!

I'll have to try the tofu/olive oil! I make the same thing but with a very thin layer of light mayo.

me too. I like Tofu pups over all the other tofu dogs I have tried.

Yes, but we aren't true-blue vegetarians - we eat fish, which, I think, makes us pescatarians? (sp??)... who knows. Anyway, DH and I don't eat meat and we limit our dairy products. We're raising our daughter without meat, but we are giving her dairy, but only organic.
