For all the mashed potato fans
So, we went to my parents for dinner yesterday and as a side dish she mashed up some cauliflower and put some low fat cheese on it.
It looked just like mashed potatoes and was a very reasonable substitute

We put ff shredded cheddar & scallions in it and then if you want put a little ff sour cream and it tastes like potato skins.

Here's a recipe from WW website - it has potatoes in it, but the cauliflower makes up the bulk of it. I'm trying to find a recipe with just cauliflower ...

Ingredients: 8 oz cauliflower, florets 3 small uncooked Yukon Gold potato(es), peeled, cut into 1-inch chunks (about 10 oz) 2 medium garlic clove(s), peeled 1 tsp table salt 1/4 cup 1% low-fat milk 2 tsp butter 1/8 tsp black pepper 1 Tbsp chives, fresh, snipped
Directions: Instructions
Place cauliflower, potatoes, garlic and 1/2 teaspoon of salt in a medium saucepan. Add enough water to cover ingredients and bring to a boil. Boil until vegetables are tender, about 10 to 15 minutes. Drain and return to saucepan.
Stir in milk, butter, remaining salt and pepper. Mash with a potato masher until smooth. Stir in chives and serve. Yields about 1/2 cup per serving.

its actually a south beach recipe and it is delish Surpise South Beach Mashed "potatoes"
4c cauliflower florets 1 oucne I cant believe its not butter spray 1 ounce of ff half and half salt and pepper
I have never added cheese but I really like this. and ots so easy you cook the cauliflower, puree it and add the rest.
