"This delicious salsa made with fresh kiwis, apples and berries is a sweet, succulent treat when served on homemade cinnamon tortilla chips. Enjoy it as a summer appetizer or an easy dessert."
INGREDIENTS:
2 kiwis, peeled and diced
2 Golden Delicious apples -
peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar 3 tablespoons fruit preserves,
any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

DIRECTIONS:
1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.






Sweet Salsa and Cinnamon Chips

"Strawberries serve as a base for a salsa featuring fresh kiwi, mango, and banana to accompany some simple home-made cinnamon chips for a delightful summertime snack, best enjoyed outdoors under the sun."
INGREDIENTS:
10 frozen strawberries
2 kiwi, peeled and chopped
1/2 medium mango - peeled
and diced
1 1/2 bananas, peeled and diced

3 (12 inch) flour tortillas
canola cooking spray
1 cup cinnamon sugar

DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. Combine the kiwi, mango, and banana in a bowl. Process the strawberries in a blender until they are liquefied and pour over fruit mixture. Stir to coat and refrigerate.
3. Coat both sides of each tortilla with the cooking spray. Cut them into triangle-shaped wedges and place on a baking sheet. Sprinkle cinnamon sugar evenly over the chips. Bake in preheated oven until golden-brown, about 10 minutes. Allow to cool and serve with the fruit mixture.


Grilled Angel Food with Fruit Salsa

Prep Time: 25 minutes
Cook Time: 1 minutes
Ingredients:
14 oz. prepared angel food cake
1 cup chopped cantaloupe or honeydew melon
1/2 cup chopped strawberries
1/2 cup blueberries
1 cup raspberries
1/2 cup blackberries
1/4 cup sugar
2 Tbsp. lime juice
1 Tbsp. chopped fresh mint
1/8 teaspoon cayenne pepper, if desired
4 cups any flavor sherbet or sorbet
Preparation:
In a medium bowl, combine fruit, sugar, lime juice, mint, and cayenne pepper and mix well. Cover and refrigerate for a couple of hours before serving.
When ready to serve, prepare and preheat grill. Slice cake in half horizontally and place, cut side down, on grill 6" from medium coals. Grill for 30-60 seconds or until light golden brown. Carefully turn cake and grill on second side for 30-60 seconds until light golden brown. Cut cake into 8 pieces and serve with the salsa and the sherbet. Serves 8
