I use 3 dipping dishes 1. Breadcrumbs: season my breadcrumbs (either adobo, sazon, italian seasoning, always garlic powder and a little salt...depends on what flavor I'm in the mood for) 2. Egg dish: I use only egg whites and squeeze lemon juice into it and whisk 3. All purpose flour
Dip chicken cutlet in flour then egg mix then breadcrumbs
Place in pan, I use canola oil and use enough to cover about 1/2 the cutlet. I fry until golden brown on each side.
Always moist and tasty. But I'm going to try the double dipping method that has been mentioned
Adobo is key!! I tried to do Adobo and Sazon, but DH wouldn't eat the "red" cutlets. He's worse than my stepkids

THIN cutlets Fry in Olive Oil ONLY
Season the breadcrumbs with fresh garlic, salt/pepper, parsley and fresh grated cheese -
This is one thing I CAN cook !!

I tried the double dipping once and they didn't come out good! I wonder what I did wrong.
My new favorite "coating" is Sylvia's fried chicken mixture. Definitely not the same flavor as breadcrumbs but oh so good... (it's meant for fried chicken pieces on the bone, but I use it for cutlets...)
