"Frying" with Vinegar and Water
Any1 ever heard of this? instead of using oil. A coworker mentioned this but didn't remember exactly how he mom used to do it.

my mother used to fry some meat (pinwheel sausage) in a little water and wine, i guess its the same idea (vinegar and wine are both acidic?) its more like poaching-because she would cover the pan, and it has to be the black non-stick bottom. Was your co-worker italian? because I have only seen sicilians do this!
