I like making salads with a grain base (like quinoa or barley), and then adding lots of veggies and toppings. They stay longer in the fridge (can be made in advance), so they are great for packed lunches, esp. in warm weather (picnics, for the beach).
I like Skinny Taste's Mediterranean Quinoa salad... I think that's what it's called. It's like Greek salad ingredients shopped up and tossed with quinoa and lemon/olive oil dressing.
I also recently made a recipe I found on Pinterest... Buffalo Chicken Quinoa Salad. I am not crazy about blue cheese, so I used shredded cheddar, but it had broccoli, shredded carrots, cabbage, and all of the flavor of buffalo chicken wings, but healthy! Definitely check it out on Pinterest.
Also, I made a good salad the other week to use up some stuff I had in the pantry. It had chopped romaine hearts, canned artichoke hearts (rinsed and drained), canned white beans (rinsed and drained), shrimp, and I used Good Seasons Garlic & Herb dressing (love this dressing!). I also have made a similar salad - Shrimp, green beans/haricot verts, hearts of palm, and chopped tomato in a lemon vinaigrette. Yum!

Taco Salad is a hit with DH and at BBQs
1 lb ground turkey 4 cup lettuce 1 cup tomatoes 1 cup cheddar cheese 1 purple onion (finely chopped) 1 1/4 ozs taco seasoning (I use El Paso, but any will do) 1 can of Black Beans 1 (16 ounce) bottle Catalina dressing 12 1/2 ozs doritos
1) Fry ground turkey and add taco seasoning.
2 Mix ground turkey and ALL ingredients, except Doritos in a large bowl.
3 Refrigerate.
4 Mix in Doritos before serving and enjoy!
