Garlic turning green
Has anyone else ever had this happen? I made chicken parm and pasta tonight, and while we were eating, we noticed green pieces of garlic. Any clue why this happens?

yes...sometimes when garlic is getting old it gets green shoots in the middle

It wasn't like that before cooking though. After cooking, the pieces were this bright, bright green. Would that still be from it getting old?

It was probably from the acidity in the tomatoes.
I used to make lemon-garlic chicken by putting fresh minced garlic over the chicken and then topping it with a slice of lemon .. the garlic under the lemon would turn an unappealing green color when cooked. My father explained that it had to do with the chlorophyll in the garlic reacting to the acid and heat. It's safe to eat though!

if it wasnt like that before than its not from being old...sounds like what the pp mentioned a reaction from the other items you were cooking with.

i usually throw it out when it grows the green shoots...if the green is really small and just starting i'll use the garlic but take out the green piece. still tastes ok to me!

definitley a lemon thing! I made shrimp scampi last weekend and DH was grossed out b/c the garlic in the sauce was green!

Thanks for the explanation! That makes lots of sense--I put lemon juice in the sauce as well, so the garlic was probably on acidity overload.

I have this happen with asparagus sometimes - the cooked garlic turning green.
On the green shoots - they grow because most of the fresh garlic we get comes from Asia (China) - by the time it gets here and you store it for a bit, it has been a while since it was picked.
It is fine to eat, just cut it down the center and remove the growth piece. If it is a big green shoot, I just toss it.
If you eat the green shoot, nothing bad will happen but I don't think the flavor will be right and it also causes bad breath/indigestion.
