GF side dishes

Speaking of side dishes... we have friends coming over with celiac. We are grilling and use the grill matts, but want to have some easy GF sides.
Thinking veggie baked beans and corn. Anything else I can just buy at Whole Foods or Costco? We have no time to do much cooking so wanted something either easy or already made.
Also don't want to have to worry about cross contamination. We've been out with these friends a lot so are always careful.

I LOVE thinly slicing up sweet potatoes and brushing them with olive oil, sprinkling a little kosher salt and some pepper and then grilling them on the grill pan or grill mat. they come up super crispy and sooo delicious.
You can even add a little more kosher or sea salt after cooking.
It's almost like a potato chip- but way better

I make a corn black bean with red peppers, with apple cider vinegar, sugar and cumin. I do it a day ahead so the flavors merge. Similar to this, except I don't use oil and onions. (I used more vinegar and sugar, but play around with it. https://theprettybee.com/sweet-tangy-black-bean-corn-salsa/

i love grilled veggies:
onions
bell peppers
red peppers
yellow peppers
eggplants
small potatoes
zucchini
etc... whichever ones you like

cut to a size that won't fall through your grill or use one of those veggie sheets.

toss in olive oil and salt/pepper to taste and/or italian seasonings.
grill to desired done-ness.

i believe the mexican street corn salad is GF.

for a fun, summer GF dessert: fruit cheesecake salad. yum.

Barilla makes the best GF pasta than most brands out there.

Make a pasta salad using that; and add whatever you want to it........broccoli, peppers, mozzarella balls, grape tomatoes, S&P, and fresh chopped basil.
Add some EVOO and some squeezed lemon and Voila!

This way everyone can enjoy it. Most people don't know they're eating a GF pasta anyway.

Bush's baked beans and grillin beans are marked gf. Other than that, we like caprese salads, bean salad, quinoa salad, coleslaw, grilled mixed veggies, baked potatoes.
