giada de lorentiis quick and spicy tomato soup... updated with "review"

has anyone tried this?
did your family like it?
was it filling enough for teenage boys?
what did you serve with it?

i'm thinking of making this, tonight
and i'm wondering all these things

RECIPE


Ingredients
3 tablespoons olive oil
2 carrots, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 (26-ounce) jar marinara sauce (recommended: San Marzano brand)
2 (14-ounce) cans chicken broth
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions
Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve

I never made it but the fact that it has beans and some pasta in it, I think it will be filling.

You could always add a salad and some garlic bread or grilled cheese sandwich.

If I wasn't pg and dealing with heartburn I would try this recipe because it looks really good.

that looks YUMMY and I'm totally trying it!.

I'd serve with warm crusty bread. I'd think that with beans & pasta it would be filling enough.

Oh my goodness... what yumminess (if that's a word) Chat Icon

there were a couple of minor adjustments made...

i had SHREDDED carrots from a few days ago, i used that

i added an extra clove of garlic Chat Icon

i was a cup short on chicken stock, so i "made" a bit with a bullion cube

i added an extra 1/2 cup of pasta

i served it with grilled cheese sandwiches (made from my own baked bread... yumm-O)

i was sure it would not be enough for SO (who is a big guy) and the boys (14 and 15). but they were full with one serving! we even had a little left over

i HIGHLY recommend this soup!!!!

i give it 5 out of 5 stars Chat Icon
