gluten free/nut free/egg free/seafood free meal idea
My friend is having a baby any day and I want to make her a meal that isn't too difficult to put together. Her and her husband have a ton of allergies so the dish will need to be gluten free, nut free, egg free, and seafood free. Preferably something that freezes well. Any ideas? TIA!

Chili freezes great and you could go with chicken, turkey, or beef. You could also do something simple like a big batch of taco meat or sauce with meat. They can throw taco meat over corn chips or a salad and have the meat sauce over gf pasta (if they make gf pasta without egg). Maybe some hearty soups.

I would do a gluten-free baked ziti or baked pasta dish.
You could also do a pre-made taco or fajita night with grilled, marinated chicken breasts (just use olive oil, lemon juice, seasonings, etc) with corn tortillas and some toppings.
You could also make some GF meatballs, sauce & throw in a bag of GF pasta and all they'll have to do is cook the pasta.
Roasted chicken drumsticks or thighs work well too with some cooked rice & roasted broccoli or other veggie.

Thanks for the ideas! I think I will do a lasagna but doesn't the ricotta mix have egg in it?

You can do a vegetable lasagne or an eggplant parm with un breaded eggplant... Just grill the eggplant or bake the slices with olive oil before assembling it.

Bake ziti or lasagna both work well with gluten free pasta. I like the Tinkyada brand the best. Trader joes also has a good gluten free pasta. I find the gluten free pastas that contain corn do not taste as good. Ricotta cheese does not contain egg.

I would stick to something like chili or meatballs.
Some of the GF pasta has eggs in it and depending on how severe the egg allergy is, it may be a problem.
You could make different types of sauces and freeze them. All they would have to do is buy the the pasta. You could do a vodka sauce and add chicken and peas to it.

thanks everyone. I ended up making a ziti though finding ziti pasta was challenging so I used penne. Hopefully it's good!
