Gluten free pancakes

So...I volunteered to have my daughter's field hockey team for breakfast next weekend. I just found out there are 5 girls on the team who stick to gluten free diets.

I'd like to make the girls pancakes and in order to accomodate everyone, figured I'd go all gluten free.

Can anyone recommend a GF pancake mix? Do GF pancakes taste much different than regular ones made with wheat flour?

We'll probably make a couple of flavors (thinking plain, apple and pumpkin). Do spices like cinnamon or nutmeg contain gluten?

TIA!

Gluten free pancakes

Gluten free pancakes do taste different- Spices such as nutmeg and cinnamon are gluten free UNLESS they have been contaminated with wheat flour during baking. Adding pumpkin and apple to the mix may change the texture which may cause the final product to be mushy or crumbly. I would recommend testing the mixture plus the fruit in advance to see how the final product comes out. The best gluten free pancake mix I have found is Maple Grove Farms Gluten Free Pancake and Waffle mix.

Pamela's is the best!!! They sell it at Stop and Shop. I bought GF cake mix from that line for my DD's 1st birthday and they were soooooo delicious. I was excited to try the pancake mix and those were good too.

Ditto...love Pamela's...I add applesauce instead of oil and cinnamon and vanilla.

I have also added a mashed banana.

They do not taste like regular pancakes, but they still taste good.

I'm not a big fan of any GF pancake mixes. I like to make Lemon Ricotta Pancakes instead. They are GF. You can use GF flour to help thicken the batter up.

Re: Gluten free pancakes

I like the Maple Grove Farms GF pancake mix. I found Pamela's to be very gritty in texture. The most important thing is to FOLLOW THE DIRECTIONS. GF pancakes are not like regular pancake mix where you just add water. You need to add oil and eggs to the batter a lot of times to create the right consistency.

Re: Gluten free pancakes

Perhaps making something besides pancakes would be a better choice. Maybe make a nice breakfast casserole (eggs, cheese bacon or sausage) potatoes and some fresh fruit. Maybe add some muffins on the side for those that want it. Then the GF kids have a good meal too!
