good, healthy-ish side dish?
I'm hosting dinner Friday night for some friends. I have a killer steak recipe and might make some polenta cakes. Anyway, I'm looking for a healthy-ish side dish that would "go" with this, that is a little different/unique and not too difficult to make (I know a lot to ask!). Any and all ideas appreciated! Thanks

Sautee some green beans with a little ginger, sesame oil and brown sugar. Yumm!

blanch asparagus - dry - then put them in a hot even with a sprinkle of olive olive, garlic and parm cheese

stuffed italian peppers- i always make this with steak..
Get the Cubanelle peppers (light green) Make a mixture of bread crumbs, parmesan cheese, garlic powder,salt,pepper and EVOO... Combine until slightly moist..
Stuff the peppers and bake until peppers are soft..
deelish!! Its my MIL's recipe :)

peas with proscuitto and mushrooms
Saute proscuitto (cut inot very small cutes) and sliced mushrooms with a small onion chopped small until mushrooms are cooked. Then add frozen peas until warmed through.

All of the above sound awesome.
I recently sliced sweet potatoes really thin, misted w/ olive oil and cooked them for about 20 mins in the oven. Good side w/ steak.
A healthier alternative to fries and really tasty. If you have a mandolin that works great for slicing too!

glazed acorn squash... YUMM!
slice it up, put it on a cookie sheet with foil, throw some brown sugar, salt and peper on it, let it roat for 10 minutes, then take it out, flip them, add more brown sugar, salt & pepper (not too much s&p) and roast for another 30-40 minutes... so yummy!!!
