Good Recipe for Overipe Bananas?

I have a bunch of of bananas that are overripe and I'd like to make something with them (muffins, maybe?). Does anyone have a good recipe that they could share? Thanks!!!

I usually do the recipe for Banana Bread from teh Joy of Cooking. I can't find that online, but here is a recipe that looks similar (just tweaked for the better).

9x5 inch loaf
Ingredients
1/2 cup butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup chopped walnuts
2 medium bananas, slic

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

Ingredients
1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Directions
Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.

Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.

Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.

Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

Use for brunch/breakfast:

Slice Bananas
add cinnamon and some brown sugar
saute in butter until caramelized and warmed

put it over some french toast and drizzle maple syrup on top

These muffins are SO good! You can't tell that there is whole wheat flour in there AT ALL. I used a mixture of milk chocolate chips and bittersweet chocolate chips and they were devoured within a day! I also used soy milk in place of the skim milk and made them in regular muffin tins (not jumbo).


Ingredients:

* 3/4 cup whole wheat flour
* 3/4 cup all purpose flour
* 1/4 cup sugar
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 3 medium ripe bananas
* 1/4 cup canola oil
* 1/2 cup lowfat or skim milk
* 1 egg
* 1 cup milk chocolate chips

Directions:

Preheat the oven to 350°F. Spray a jumbo muffin pan with baking spray (or grease and flour).

In a large bowl, combine the flours, sugar, baking powder and salt. In a separate bowl, mash the bananas. Add the canola oil, milk, and egg to the mashed bananas. Beat the banana mixture until smooth.

Add the banana mixture to the dry ingredients. Combine, stirring just until all dry ingredients have been moistened. Add the chocolate chips to the batter and stir to combine.

Fill the muffin pan with the muffin batter, filling each muffin cup about 3/4 full. Bake the muffins for 25-30 minutes, until a toothpick inserted into the center comes out clean.

Cool the muffins slightly in the pan, then remove them from the pan to finish cooling.

This recipe will make 6 jumbo muffins.

I just made these today and they were delicious! I can't believe there is only 1/4 cup sugar. great recipe!

Good Recipe for Overipe Bananas?

We loooove banana ice cream! Just peel and slice up bananas and freeze them overnight. Blend or process in a food processor until creamy, it's delicious. My kids like Nutella or peanut butter swirled in.

Mix box of yellow cake mix with 4 mashed bananas.. No other ingredients. Pour into lined muffin tins about 3/4 full. Bake for 15 to 17 minutes at 350. Most delicious and moist muffins I have had.

skinnytaste has a great banana bread recipe and also a great banana pancake recipe.

I also freeze bananas once I see I wont be able to get through them.
