i'd do a starch and a veg
rice pilaf
potato gratin (individual ones are awesome)
roasted fingerling potatoes
roasted garlic or buttermilk mashed potatoes
risotto
big salad
balsamic roasted asparagus
burnt broccoli
roasted broccoli & cauliflower with lemon slices
sauteed mushrooms

You could throw some potatoes right in the roasting pan. Or if you're doing gravy maybe make mashed potatoes. Add a veggie like roasted carrots or asparagas.

baked potato with fixings
and a veggie
glazed carrots
or
spinach/broccoli sauteed with garlic, olive oil

with roast chicken, i think mashed potatoes with grav! But other ideas are:
twice baked potatoes
potatoes au gratin
roasted potatoes with garlic and herbs
rice pilaf
risotto
