it may sound ridiculous, but the amount of methane that comes from cattle is even more ridiculous. Taxing the farmers wouldn't really be any different from taxing the factories that produce greenhouse gases.

Except that factories can made adjustments in technology to make their production greener. The point of those taxes on factories is to create an incentive to move to greener technologies. There's not a whole lot a farmer can do to control the methane gas their animals emit.
Such a tax on farmers could destroy small and mid-sized commercial farms in the US. The price of meat and milk will inevitably go up, as the farms that do stay in business will pass the cost of the tax onto consumers... so we'll ultmately be the ones paying for it anyway.

That's not totally true. I watch a lot of "Green" shows, and several of them mentioned that if they changed the diet of the animals, they could very easily drop the methane production by 70% or more.

Sort of. My understanding is that they think developing new strains of grass would decrease methane production of cows -- but that hasn't been totally proven yet and these strains of grasses haven't been developed. You'd then also need to make sure these grasses can survive where the cows are or can be grown / sold as hay cheap enough to make it worth the farmer's effort to feed that. (It would have to be less costly than the methane emissions tax...)
