Ground chicken and spinach - need ideas
any good recipes? Need something quick and easy to make for dinner. With the holidays we've been eating out a lot or not healthy so I have ground chicken for the kids bc need to get in some protein.
Any easy Bolognese recipe? I was thinking chili, but for next week bc I don't have all the ingredients.

Ground chicken and spinach - need ideas
What about burgers? I usually mix in hot sauce for a buffalo style burger but you could do bbq sauce for the kids if that's too spicy. Spinach I would just make into a salad.

Thanks! My husband isn't a fan of turkey or chicken burgers. Was thinking spinach meatballs, but I've made them so much before

I have a great chicken meatball recipe but it uses broccoli not spinach But you can totally sub the spinach for the broccoli

Here it is- you can just sub spinach for the broccoli. It's delicious
1 pound ground chicken (or turkey) 1/2 cup bread crumbs 1/2 cup grated parm or romano cheese 9 cloves crushed garlic (divided) 1 egg 2 tablespoons chopped fresh parsley (I use dried parsley in a pinch) 64 oz chicken broth or stock Bag of frozen broccoli florets Extra Virgin Olive Oil Salt, pepper, red pepper flakes to taste 1 lb penne pasta 1/4 cup white (or red) wine
Bring the chicken broth and wine to a slow boil in a pot. While that is boiling make the meatballs. Combine the ground meat, bread crumbs, grated cheese,5 cloves of garlic, parsley, salt and pepper and egg in a bowl. Mix well. Form into meatballs Put some EVOO in a frying pan and fry the meatballs on all sides until brown. Drop the browned meatballs into the boiling broth/wine mixture and let simmer for 30 minutes. While doing this, add the broccoli , a few red pepper flakes (to taste) and remaining 4 crushed garlic cloves to the pan where you fried the meatballs. Add more oil if needed. Cook until broccoli is tender. When 30 minutes is up, remove meatballs from broth and place on top of broccoli. Use this broth to cook your pasta in.

you can make that into an italian meatloaf. or make a bolognese sauce with it of course.

What about an Italian wedding soup? Spinach, chicken meatballs chicken broth and you can add some tortellini or even a can of cannellini beans. I make this often and my 17 month old loves it!
