Personally, I don't like meatloaf made with anything but meat. You can buy 93 or 95% lean ground beef (i go to Wild By Nature in huntington for the 95% lean) and it is actually leaner than most ground turkey. Ground turkey, while it sounds really healthy, is made with white and dark meat and they grind a lot of fat up in it too. And it doesn't taste the same as beef!

So, stick with the "meat"!!!

Re: Has anyone made meatloaf out of ground turkey?

It's ALWAYS come out great if not better. I find the meat seems to have less fat and is VERY juicy. I would also recommend bread crumbs, because ground turkey tends to be mushy. Also...include fresh herbs.

Do you have a meatloaf pan? The one that pulls out and drains all fat. If not and you plan on making a lot of meatloaf...definitely get one. They're great!

ETA: We only use Lean Ground Turkey.

good to know! the recipe on the Lipton onion soup mix calls for breadcrumbs, so I would def use them. I made a meatloaf (with ground beef) last week for the first time using that recipe and it was UNBELIEVABLE!!!!! DH and I were floored! Chat Icon

Unfortunately, me & DH came to that conclusion as well. Meat ONLY for meatloaf. Its just not the same w/ ground turkey and chicken. Kinda gross actually Chat Icon

ETA: This is only my opinion and my experience, but when I added the breadcrumbs to either turkey or chicken meat loaf the times I have made it, it made it a horrible texture. Almost dry, bread-like........doesnt go too well in a ground turkey/chicken meatloaf.

I always make it with turkey and it comes out great. This is what I do:

Mix ground turkey with onion soup mix, crushed cracker crumbs(I've used cheez its, goldfish, saltines-you can't add too much that might be why OP's came out dry) 1 can condensed cream of mushroom soup-I've used healthy request, salt, pepper and a bit of ketchup. I cook it on 375 for about an hr-I use a thermometer for temp. It is NEVER dry and tastes awesome!

Peas, my MIL makes an awesome turkey meatloaf, but will not give up the recipe. Chat Icon I suspect it has adobo in it.

Re: Has anyone made meatloaf out of ground turkey?

it's not meatloaf, but I make them into mini loafs, not burgers

Stuffed Turkey Burgers
Serves 4
10 slices whole-wheat bread
1 ½ pounds lean ground turkey
¼ cup reduced fat sour cream
¼ cup mango chutney, preferably Major Grey’s, finely chopped
2 Tbsp Dijon Mustard
1 Tbsp chile powder
1 tsp coarse salt
4 ounces Fontina or Monterey jack cheese, quartered and cut into strips
Olive oil for brushing
1 cup mixed greens
1 medium tomato, sliced
Preparation
Cut 2 slices bread into very small pieces, and place in a medium bowl. Add turkey, sour cream, 3 tablespoons chutney, 1 tablespoon mustard, chile powder, and salt; mix to combine.

Divide meat mixture into 8 equal-sized portions. Flatten one portion to a diameter of 3 1/2 inches. Place one quarter of the cheese in the center in a single layer. Top with another portion of meat and seal edges by pinching with fingers to enclose cheese. Repeat process with remaining ingredients. Place burgers on a parchment paper-lined baking sheet. Cover with plastic wrap, and freeze for 30 minutes.

Heat a grill or grill pan over medium high heat. Brush both sides of each burger with oil. Reduce heat to medium, and grill burgers until firm and cooked through, flipping once, 7 to 8 minutes per side.

Lightly toast remaining 8 slices of bread. Top each of 4 slices with ¼ cup greens, followed by a burger and a tomato slice. Stir together remaining tablespoon each chutney and mustard. Spread chutney mixture evenly over remaining 4 toasted bread slices, and place on top to enclose. Serve immediately.

I agree... experiment!

Turkey tends to be drier, so I add things that will help it keep it's moisture (chopped, red and green peppers, mushrooms) I love experimenting, especially with Turkey Burgers/or Turkey Meat Loaf. You really can't go too wrong.

Re: Has anyone made meatloaf out of ground turkey?

I make it all the time, since I don't really eat beef. I find the super lean turkey doesn't taste as good as the 93% fat free or whatever it is (the cheaper one, LOL)

Here's my really simple recipe:

1 20 oz package ground turkey
1 cup salsa
1 egg white
1/2 to 3/4 cup of oatmeal (moister with less oatmeal)

Mix all ingredients in a bowl, put in loaf pan and bake at 350 degrees for 45-50 minutes.

If you are on WW, I cut the loaf into 8 slices and each slice = 3 points.
