There is truly so much to see..we didnt use a travel agent. My DH researched things online and asked a lot of people what they recommended. A LOT depends on how long you are planning on going and what type of experience you want. To me you dont really have to do the 5 star hotel thing b/c you spend almost NO TIME in the darn room or at your resort...
Here is what I recommend...
Volcanoe House on the Big Island. Walking to the Lava flow on the Big Island. Horse Back Riding On Kuai. Kayaking on Kuai. You have to do a Luau (its corny but you have to do it) Renting a convertible on at least one island (just because) Getting some of Uncle Mikeys dried fruit (its out of this world) You have to have SUSHI. Find out where to go snorkling off the beach (you dont really need to take a boat unless you are really into snorkeling or Scuba Diving you see the same fish right off the beach Turtles too.)

We went to Maui, Kaui, and Oahu and I liked Maui the best, but they were all awesome. I would do a luau- because how can you go to Hawaii and not go to one! We also did a sunset cruise in Kauii which was really nice. Our travel agent was Liberty Travel in Massapequa. The Westin in Mauii was great.

My SIL lives on Big Island in North of Kona in Captain Cook. If you want to not pay a ton of $$$$$ to do stuff on the Island, let me know. We are leaving on Wed morning and have been there twice before. Besides the flight (which we booked ourselves) we stay w/ my SIL. Last year we stayed one night at this AWESOME hotel in the middle of the rainforest. The BIG conglomerate hotels charge way too much $$$$$ for stuff to do. I would advise staying at a B & B on the big Island overlooking the ocean. You get the view, great service, beautiful room, beach and you do not have to spend tons of $$$$$.
BTW: Kealakekua Bay is THE BEST snorkel spot on Big Island. Tons of tourists pay big $$$$$ for a boat ride there. If you have a rental car, you can drive there yourself, parking is free and jump in the water for NADA.

BEST snorkeling on Big Island!
I could go on and an on if you want more info let me know. This is a long post already. The point is there is a TON to do there with out paying an arm and a leg. GL!
