Healthier recipes for a large group
My department does a birthday luncheon once a month to celebrate birthdays. You get assigned to a group and you have to do it once a year. This is my month and we decided on a healthy theme. Can anyone help me think of some good recipes that I can serve to a large amount of people (about 30 or 40) but there are lots of other things there!

You can do wraps (lean meats, small amount of cheese.. different options inside like tomatoes, avocado, sprouts, etc.) and a big green salad with some fruit for dessert. I'd probably go for some chocolate dipped fruit for dessert.. because you need a LITTLE bad in your life!
Other options: Grilled Chicken, Mixed Grilled Veggies, Tabouleh salad, Fruit Salad?
Maybe a 'lighter' Tex/Mex theme? Vegetarian Chili, Turkey Tacos and Brown Rice served with Reduced Fat Cheese and tons of Veggie toppings - onions, scallions, cilantro, tomatoes, lettuce, fat free refried beans..?

- turkey chili -bean salad -rice and beans witih brown rice - stir fry veggies and chicken with couscous - roasted vegie platter - roast chicken

Thank you. We decided to go with deli platters :) That way people can be as bad as they want LOL

Salsa Chicken:
Cooked chicken (perdue shortcuts, rotissary, leftovers) Black beans Corn (canned, frozen) Salsa
You can serve it with rice, or in a tortilla w/ cheese.
I guess you can use canned chicken too if you like it - never tried it though
