Healthy Eating
I'm always looking for new "healthy" recipes to try while TTC. I know this isn't the recipe board, but I thought we might want to share some healthy TTC secrets such as recipes with each other.
Here's one of my favorites. I usually marinate the chicken in soy sauce and bake it. I also omit the sugar:
Crunchy Oriental Chicken Salad
2 tablespoons butter or margarine 1 package (3-ounces) Oriental-flavor ramen noodles soup mix 2 tablespoons sesame seeds 1/4 cup sugar 1/4 cup white vinegar 1 tablespoon sesame or vegetable oil 1/2 teaspoon pepper 2 cups cut-up cooked chicken 1/4 cup dry-roasted peanuts, if desired 4 medium green onions, sliced (1/4 cup) 1 16-ounce bag coleslaw mix
1. Melt butter in 10-inch skillet over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet; stir into butter mixture.
2. Cook 2 minutes, stirring occasionally. Stir in sesame seed. Cook about 2 minutes longer, stirring occasionally, until noodles are golden brown; remove from heat.
wing it! If you can't find the Oriental-flavored ramen noodle soup mix, go ahead and use any ramen noodle soup mix such as teriyaki chicken-or for a little more flavor-Cajun chicken or spicy chili chicken.

Sounds yummy!! Donna I put a fat-free low-cal cookie recipe on the recipe board, if you are interested. They are chocolate kisses, for VD!! I used Splenda instead of sugar and they were still yum.
I have to try you recipe...

Alright guys here is the recipe, man this has certaintly been in demand
Cream Cheese Burritos
1 pound of whipped cream cheese (it has to be whipped because it spreads more smoothly)
Package of flour burritos 1 medium onion chopped finely Can of black olives chopped Jar of Roasted peppers chopped finely
Spread the cream cheese over the whole burrito (thin layer) dont make it too thick otherwise it will break when you roll
Add at one end of the burrito the onion, olives, and peppers. Roll them up.
Pack them in wax paper and refrigerate them for at least 10 hours. The longer you keep them in the fridge the firmer they will become. The ones I brought to Donna were refrigerated for about 14 hours.

Maple Glazed Barbecued Chicken This recipe serves: 6
1 onion, roughly chopped 1 cup ketchup 1/4 cup Worcestershire sauce 1 teaspoon Dijon mustard 1 teaspoon hot sauce 1/2 cup cider vinegar 1/2 cup maple syrup 6 boneless, skinless chicken breasts, about 4 to 6 ounces each
1. To make the barbecue sauce, place all of the ingredients except the chicken in a blender or food processor. Blend until thoroughly combined. 2. Marinate the chicken in half of the sauce while you preheat the grill to medium-high.
3. Remove the chicken from the marinade and place it on the hot grill. Brush the chicken occasionally with the remaining half of the sauce. (Discard the excess sauce that the raw chicken was marinating in.) Grill the chicken for about 4 to 6 minutes on each side, until it is cooked through.
Serving Size: 1 chicken breast

In the Father's version of "What to Expect when your Wife is Expecting" book there are some great recipes...DH used to make me some of those recipes while I was PG....I'll have to take a look at the book and post some of the recipes.
