Heart healthy meals?
For those of you who've seen my other posts, my FIL is already asking what kinds of foods he could make. I have a great chicken and broccoli recipe that I told him I'd share w/ him but I have no idea what else. He asked me to look online and print out some recipes that he could try. Anyone have any good recipes that don't require eggs or red meat, or whatever else someone that just suffered from a massive heart attack can't have? TIA!

I don't know exactly what you're looking for, but there are tons of great vegan cookbooks out there. Some great ones are:

The Garden of Vegan
Great meals don't have to contain red (or any) meat or eggs - there's so many delicious foods out there. He doesn't need to feel deprived!

its very simple.... he can eat about 2/3 of all home cooked meals made from scratch.... pre-packaged / processed foods are much more difficult to fit into his diet.
things to avoid: processed meats (bacon, saussage, bologna) fatty meats (skirt steak, lamb chops, fatty pork chops) all things made with coconut milk / oil full salt soups things with lots of cream / cheese / whole milk deep fried stuff
things that are 'sometimes' foods: pasta rice bread potatoes low fat cheese (feta, goat, low fat shredded cheeses) eggs (preferably more whites, less yolk)
things that are GREAT for his health: baked fish fillets (salmon, cod, flounder) things fried in a little olive oil or canola nuts veggies any type of chicken / turkey without skin pork loin (lean, not fatty) lean beef (stew meat, sirloin) olives yams fruits
the trick with meats is he should only eat 4 oz portions... not huge 1/2 lb burgers Now look at the last list... how many dishes can you think of using these foods... I can think of DOZENS! Braised pork loin, sliced ontop of a spinach vinegrette with walnuts (high in omega 3's) and a few dots of herbed goat cheese
greek salad (2 med tomatoes cut into wedges, a 1/2 a green pepper sliced thin, 1 inch of thin sliced cucumber, kalamata olives, sliced red onion, with a small piece of good feta, a good sprinkle of oregano, and some olive oil dribbled on top)
baked salmon with lemon and dill, with a baked potato with a ton of broccoli
Dessert can be interesting trail mixes, with a few scattered chocolate chips added, to satisfy the sweet tooth... or a lowfat yogurt shake (stonyfield farms makes GREAT lite ones!) I eat like this every day... after a while, you seriously crave those greek salads!
keeping chopped up melon or berries in the fridge also is a good snack source...
he CANNOT: eat out regularly grab take-out munch on cakes, chips, candies....
