HELP: Need entertaining ideas (app, meal, dessert - but 1 is lactose intollerant)
I am at a loss of what to make.
When we originally set this up we were going to BBQ, but it turned so cold and rainy this week.
it's 2 couples and we both have young kids (a baby/a toddler). So I don't want to be a slave to the kitchen and not get to chat. Prepreping would be great!
Any ideas?

roast pork with corn bread stuffing on the side...
i usually get the pork roast and poke holes in it and stuff the holes with lots of chopped garlic and fresh cut parsley...mix a black pepper, salt, garlic powder together and rub the outside of the roast.....i use lots of black pepper for this part.....once it cooks it isn't spicy, but you can use as much as you like or dislike.
the stuffing you can either buy corn muffins or use the jiffy mix. Saute 3 or 4 pieces of chopped up bacon with a little olive oil until just brown, then add chopped onion and celery until translucent, add a teaspon or so of poultry seasoning or mrs dash seasoning, add crumbled corn mufins (6 large muffins or two boxes of mix, add a half of cup of apple juice (we use motts fresh pressed) and enough chicken broth until moist, but not watery...i usually add a little at a time until it is the consistency I like....
Then you can put it in one baking dish or in muffin tins to crisp up the top by baking it for 10 minutes or eat without baking.....delish!

that pork and cornbread recipe sounds so good! I am good at following recipes, but so scared to cook something for stranger for the 1st time.

I promise it is a crowd pleaser and suuuuper easy to make....haven't met anyone who doesn't love it....i usually serve it with apple sauce on the side and gravy if you have gravy lovers....that I just use heinz gravy and mix in some chicken broth to thin it out.
if you want specific measurements...i can break it down a little more.
the cornbread stuffing i took a rachel ray recipe and tweaked it to be my own, but I'm sure that if you look it up on food network, you can find her exact recipe.

for appetizers you can serve chips and guacamole and/or salsa.... fried artichoke hearts one can of whole artichoke hearts or a can of quartered.....drain well. coat in flour, then egg, then mix of bread crumbs, salt pepper, garlic, choppede parsley and pan fry with a spritz of pam spray and splash of evoo.
antipaste platter
stuffed portabella mushrooms with spinach and sundried tomatoes.
asparagus frittata (I use 5 whole eggs and 3 egg whites) saute chopped fresh asparaguse until bright green, add scrambled eggs, fresh parsley, salt and pepper....cook until eges start to dry up and place whole pan in the broiler ....it will almost look like the egg is baking into a cake...when it looks as though it is dry through the middle, remove from broiler and the puff look will go away....this usually only teks about 4 minutes -depending on the strength of your oven.....keep a close eye on it when you place in the broiler.....i alternate this recipe with any veggi...you can top with cheese for those that can eat cheese. I usally sprinkle locatelli, or cheddar...depending on the veggie i use.
