Help! Need recommendations of what to cook for 20+ people!
What is a good summer meal (besides hot dogs and hamburgers) that I can make to accommodate 12+ adults and 8+ kids, that isn't too heavy but will fill you up?

I would probably do a slightly upscale BBQ. A green salad, a pasta salad or hot pasta dish, sliced London broil, BBQ chicken legs, shrimp scewers, cake and a nice fruit salad.

Marinated steak and chicken cutlets. I'd do a ginger soy marinade for the steak and a garlic lime for the chicken. A pasta salad, some grilled veggies, caprese skewers and maybe some corn on the cob if you don't mind keeping 20 ears on the bbq would be good sides. Fresh veg and Chips with fresh pico de gallo and guac to start and a melon salad and ice pops for dessert.

It may be expensive but I like the marinated steak idea. What type of cut of meat would you suggest and how would you cook it?

Marinate a skirt steak, which is a cheaper cut of meat but stands up great to marinades and perfect for grilling and for crowds. Just grill to desired doneness and slice on the diagonal. You can serve it with a green salad or a pasta salad or even more fajita-style (grill up some peppers and have some tortillas on hand and people can pile it all up and make their own). Also maybe making something like chicken skewers, which can be assembled ahead of time and then grilled right there.

Sirloin Steak is on sale for 2.99/lb at Best Yet this week. It marinates well. I also like to marinate London broil. I know a lot of folks love skirt steak.. but it's not my favorite cut because it's very fibrous and there is a kind of gaminess to it that the marinade doesn't always mask. I do skirt when I can hide it (like in fajitas or tacos where they are smothered in tomato, lettuce, sour cream..). Of course.. I may just be crazy.

London broil or flank marinate well. You can usually find them at bjs and they also have a good marinade called mr. yoshido. sausage and peppers is pretty east too. The peppers and onions can be done ahead too. If you can find a good marinade (I haven't find one I like) portabello mushrooms are good for those who might not want meat. Enjoy your bbq.
