Hershey Park
DH and I desperately need to get away for the weekend and we were thinking of going to Hershey Park for Labor Day Weekend. I was hoping for some hotel recommendations and also I wanted to know it if is necessary to go the park both days we are there or if one day at the park will be enough.

When we go we stay at the Red Roof Inn in Harrisburg. When we go we spend one day at Chocolate World, one day at the park and other days doing other things (Tanger, etc.).

There's a best western not too far away - and the quality is nice for any best western honestly...
You CAN do hershey in one day - but as it's a holiday - you may want to space it out and take your time (the lines may be LARGE) because of the holiday.
They also have ZooAmerica - so you can take some time to do that on the busier day that you go.
Also - they have twilight admission. Let's say you head there on Friday and are at the hotel Friday at 4:00. You can go to Hershey at like 6:00 and stay until closing for half price! Then - Saturday - you can go all day!
Just an option for ya!

We stayed at the Courtyard by Marriott in Harrisburg/ Hersehy and it was 10 min from the park (without traffic) very convient to get to the park from there

Here's the ultimate Hershey Park tip: Get a soft-serve ice-cream cone from the Turkey Hill shop, it's by the line for the Sky Ride. I want to go back to Hershey just to get another cone!
