I would love to, but I don't have a "recipe" ... there's a lot of looking & smelling, tons of tasting & adjusting. If I sat down and really thought about it I could probably tell you the process (do this, then that, then this, then that) but I don't know if I could ever give exact measurements becuase it depends on things like the acidity of the tomatoes, if you are making a meat sauce or a marinara, what type of meat you are using (salt content) etc ...

You took the words right out of my mouth!

I can give you a general Idea...I make sauce all different ways...but for a general plain sauce:

I use extra virgin olive oil (Maybe 2 tablespoons?) let it get a little heated (Not too hot-just until you smell the oilve oil)
Then I add some chopped garlic (maybe 3 cloves?) let them start to get a little yellow in color (right before the turn golden-it will get bitter if you let it cook to much)

I then add 2 cans of Tomato sauce (Scali or something like that is the only brand I use) and stir it. Then I put in a few leaves of basil...sprinkle with fresh pepper...and let it cook.

Now if there are things you need to do to it...- this is where it's hard to explain. Too bitter, sweet, acidy...thick, thin. there are so many tricks!

I have a GREAT recipe (EASY) for oven roasted sauce...let me know if you want that one instead.

Seriously, I would just try it a bunch of times until you like how it tastes. Yuo will probably ruin a few, but that's fine, it's part of the funChat Icon

my favorite canned tomatoes are pastene..in a yellow can..they are a little sweeter.
I usually put them in a blender for a second just to break down the tomatoes. I usually use about 3 of the big cans. maybe 20 oz?

I put some olive oil in a pot, just enough to coat the bottom and add about 5 cloves chopped garlic. Once the garlic cooks a little add the tomatoes and bring to a boil. Once boiled I add a lot of fresh chopped basil, about 3/4 cup red wine, italian seasoning,pepper, a little salt, a chicken or beef bouillon cube, and a little sugar.

Then just let it simmer..I like when it simmers for a few hours, cuz it gets thick.


try it, its delish!! Sometimes i'll put meatballs in it or pork ribs...the meat just falls off the bone!

See all the home made people always rag on the jarred people, but when it comes down to it, a recipe is impossible! If someone asked for a chocolate chip cookie recipe, we'd see some real instructions here! LOL Chat Icon

When you make a big pot of sauce, do you freeze it? In what? And for how long?

I got mine from MIL...DH loves her sauce.

It's 2 large cans of crushed tomatoes
2 cans of tomato sauce (the small cans)
2 cans of tomato paste

brown sausage and garlic in a frying pan....add into sauce. Sprinkle basil and oregano on top---enough to cover the top of the sauce and mix in.

Simmer for several hours.

5 cloves garlic (or less depending on your taste)
1 medium to large onion, diced
2 cans peeled tomatoes (crush in hand)
1 can crushed tomatoes
2 cans tomato paste
1 can of water
1/4 cup fresh italian parsley (curled) chopped
1/4 cup fresh basil chopped, plus a few whole leaves
Dried Oregano (3-4 shakes of the jar)
Salt & Pepper to taste
* Pinch of Sugar if tomatoes are really bitter.



1. Coat bottom of nonstick stockpot with olive oil.
2. Sautee diced onions on low heat until almost translucent.
3. Add garlic and sautee until brown (but not burnt!)
4. Add 3 cans of tomatoes + about a 1 can of water (use water to get all of tomatoes out of the cans) ** Use tomatoe puree instead of peeled tomatoes for a thinner sauce.
5. Season with 1/4 cup fresh italian parsely choped and 1/4 cup fresh basil chopped, a few whole leaves of basil, salt & pepper and dried oregano.
6. Bring to a boil and lower heat.
7. Add tomatoe paste and stir.
8. Simmer for a few hours (minimum 1-1/2 hours - longer is better)

* Taste occassionally, add more spices as neccessary to your taste.
* Make sure to stir frequently so that it doesn't burn.
* If you keep the cover off, the sauce will come out thicker than if you leave the cover on (or half on) the pot.

Normally I add meatballs, pork ribs, sweet sausage, braciole or beef chunks.

I freeze it in the square pyrex containers. They stack easily. Since we're only 2 people, I use smaller containers. Usually a pot of sauce will allow me to freeze at least 4 containers.

I use POMI tomatoes. They're from the makers of Parmalat, so they come in that cardboard container. Trader Joes sells them, most grocery stores (Best Yet on Larkfield Rd), even BJs.

They're so yummy.

1. Coat the bottom of a sauce pot with olive oil, not a huge amount, but enough to cover the whole bottom.
2. throw in either 2 small, or 1 medium diced onion.
3. simmer until the onion turns translucent.
4. add a heapy spoonful of crushed garlic, and let it cook for a minute or two.
5. add one can of tomato paste, and fry it for a second,
6. then fill the tomato paste can to the top with water-and add that into the pot, and then stir it up, and let it simmer while you
7. open two cans of whole peeled tomatoes (I swear by Red Pack) in thick puree. Put them in the blender for a second (you'll have to do one can at a time) and add them to the pot-and stir.
8. add a little salt (think 1 sugar cube size amount), add sugar (think 3/4 sugar cubes), add oregano (2-3 sugar cubes) add basil (3 sugar cubes)
If you use fresh oregano and basil use less, as they are stronger than dried.
Bring it all to a boil, and then cover and turn it down to a simmer, and let it cook for about 4 hours.

you can add any meat you like, I always cook the meat first, because I think it can get really greasy if you add raw meat to the sauce.
