Homemade caramel popcorn....
Omg, I made this tonight and it's freaking delicious! It was pretty easy, too!
15 cups plain popped popcorn 1/2 stick of butter 1/4 cup of light corn syrup 1 cup packed brown sugar 1/2 tsp. salk 1/2 tsp. baking soda
Heat oven to 200 degrees. In a sauce pan, heat the butter, corn syrup, brown sugar and salt over medium-high heat, stir every now and then until bubbling around the edges. Once bubbling around the edges, let the mixture sit over the medium high heat without stirring for 5 minutes. After 5 minutes, remove from heat and add the baking soda and stir. It will become frothy and ligth. Then pour over the popcorn and coat it well. Spread on a large, ungreased cookie sheet and bake for 1 hour, stirring every 15 minutes. Let cool for 30 minutes and store in airtight container.
ABSOLUTELY delish!

Just buy plain popcorn kernels and put a few tablespoons in a paper lunch bag. Fold over the top and microwave for about 90 seconds (listen for the popping to slow).
Works like a charm

Do you have Golden Syrup in Australia? Thats the best substitute that we have here.
