How do you make spaghetti sauce?

I'm clueless, I always use jarred sauceChat Icon

everyone makes it differently.

I start by covering the bottom of my sauce pan with olive oil, and then sautee garlic, but make sure you have it on low so it dosent burn. After the garlic has sweated into the oil, I add about 4 cans of tomato sauce, 1/2 can of Tomato paste, and 1/2 can of tomato puree. 1/2 finely chopped onion, and 1/2 teaspoon of sugar to cut the acidity.

I add fresh Basil, 1 bay leaf, fresh oregano, fresh parsley, and about 1/2 cup of grated parmesan cheese.I always throw in a peice of brasciole, it gives it alot of flavor. I let my sauce cook for about 6 hours.

For marinara...

I out some olive oil in a pot and cut up onions. While those are cooking, I sprinkle in oregano, basil and parsley and a scoop of minced garlic. When the onions are soft I put in a can of tomato paste and two can of sauce. I cook for 2 hours and eat the next day. It always tastes better the 2nd day.

that's a good sauce.

I sweat the onions and garlic together. Add one 32 oz can of crushed tomatoes, one 32 oz can of plum tomatoes crushed in my hands with the juice-one can of water one small can of tomato paste.

Salt, pepper, garlic powder, onion powder, oregano, basil, red pepper flakes. Mix it up-cook on medium high heat for about 1.5 hrs. Taste periodically to adjust for seasonings. This has no meat in it.

Olive Oil
5 cloves garlic (or less depending on your taste)
1 medium to large onion, diced
2 cans peeled tomatoes (crush in hand)
2 cans crushed tomatoes
2 cans tomato paste
1/2 can of water
1/4 cup fresh italian parsley (curled) chopped
1/4 cup fresh basil chopped, plus a few whole leaves
Dried Oregano (3-4 shakes of the jar)
Salt & Pepper to taste
* Pinch of Sugar if tomatoes are really bitter.



1. Coat bottom of nonstick stockpot with olive oil.
2. Sweat diced onions on low heat until almost translucent.
3. Add garlic and sautee until brown (but not burnt!)
4. Add 4 cans of tomatoes + about a 1 can of water (use water to get all of tomatoes out of the other cans)
** Use tomatoe puree instead of peeled tomatoes for a thinner sauce.
5. Season with 1/4 cup fresh italian parsely choped and 1/4 cup fresh basil chopped, a few whole leaves of basil, salt & pepper and dried oregano.
6. Bring to a boil and lower heat. Simmer for a few hours (minimum 1 hours - longer is better)
7. Add 3 cans of tomatoe paste and stir in.
8. Simmer for another 1-1/2 hours.

* Taste occassionally, add more spices as neccessary to your taste.
* Make sure to stir frequently so that it doesn't burn.
* If you keep the cover off, the sauce will come out thicker than if you leave the cover on (or half on) the pot.

In my DH's family, after they brown all the meat, they will fry the tomatoe paste in the left over oil until it turns a deep brick red then add it to the sauce.

Heres how I make mine

1 head garlic chopped
one large onion chopped
2 cans whole tomatoes, crushed in hand
2 cans crushed tomatoes
1 can tomatoe paste
pinch of sugar
basil
oregano
bay leaf
4 to 5 dried chiles.
3lbs chuck meat, cut into 1 inch pieces

I sweat the garlic and onions with olive oil in the pan, then I add the remaining ingredients and simmer on the stove up to 6 hours, but no less than 3.

I make mine like this:

2 cans pastene crushed tomatoes
garlic
basil
red wine
pinch of sugar
beef bouillon
salt & pepper


I saute about 5 cloves of chopped garlic in olive oil (about 2 tbsp)
then i add the canned tomatoes... Bring it up to a boil. Add about 1/2-3/4 cup red wine.... tons of chopped fresh basil...a pinch of sugar and the beef bouillon-probably a tbsp of the powdered kind..a little fresh black pepper and a pinch of salt.
I let it cook for a few hours and it gets nice and thick..

ps- the pastene tomatoes are pretty thick and sweet, so you dont even need to add tomato paste...Chat Icon

I think they are 28 oz cans? I freeze them.
I make enough for at least 4 good sized pyrex containers with meat. I freeze them.
Or I make 6 smaller ones and freeze the meat in ziplocks and take what I need when i defrost the sauce.
