How do you prepare your side veggies?
I'm getting so sick of boiled broccoli, string beans, peas, cauliflower, etc. I am in desperate need of some quicky, easy, flavorful recipes for side veggie dishes (no meat, no dairy) - any ideas?

i make asparagus alot and corn on the cob, and green beans
asparagus i just put in the convection oven on a pam greased pan with salt, pepper, garlic salt on it and bake for 12 minutes on like 425. then i add parm cheese and bake for another few minutes
corn on the cob i just put in a boiling pan boil it with salt and sugar then reduce to simmer for 20 minutes and cover
green beans i boil with 3 garlic cloves and on the side i make a sauce of soy sauce, oregano, salt pepper, and garlic powder. then i bake some sesame seeds for like 5 minutes (careful not to burn) and put them in the sauce and when the green beans are done i add the sauce to them
sorry i don't measure anything so i'm the worst at putting up recipes!

You can boil carrots then put some butter, and seasoning on when it's finished.
String beans Asparagus..I love them on the BBQ

1/3 cup olive oil 2 Tablespoons fresh lemon juice 2 cloves garlic minced Salt and pepper Pinch of red pepper flakes if you like spice
I make this a half hour before and whisk it to let the flavours combine. I then toss it with (steamed, boiled or whatever) broccoli or green beans.

Broccoli: I use Pam to keep it form sticking....and sautee it using only a little olive oil then I season with salt, pepper & garlic pwder & throw in a handful of breadcrumbs & toss around. Just let it cook until the softness you like.
I do the above w/ cauliflower as well.
Asparagus: lay in baking dish, drizzle w/olive oil & sprinkle with seasoning, breadcrums & a little parmesan cheese!
Roasted brussel spouts are good too!
Sauteed spinach in a pan is yummy all seasoned up!

First get a steamer basket-veggies come out so much better steamed-some cool things:
edamame sugar snap peas carrots with a brown sugar glaze(they sell these frozen too) Breaded cauliflower spinach sauteed with garlic.

I usually dot asparagus with butter and sprinkle some S&P and bread crumbs on top.
Since you said no dairy - you can try this soy butter spray that I've used before - it really tastes like butter. I can't remember the exact name of it, but it's in the aisle with the butter.

ill sautee escarole with garlic and oil until soft over medium heat,
then I'll add a can of strained and rinsed cannelli beans with a can or more of chicken broth, red pepper flakes and crushed sea salt
boil for 5 minutes
serve in a bowl topped with shaved parmigana cheese and a crusty bread
ill usually make that in conjunction with some chicken or pork disk

Me too. My favorite is sauteeing asparagus in olive oil and then a drizzle of balsamic. Mmmm. Works nice with string beans too.
I also like to sautee string beans with a little bit of oil and tomato sauce.

For String Beans... I steam or mic the beans, then I do a little Olive Oil, thinly sliced garlic (or just garlic powder) and sprinkle with bread crumbs
Or you can also throw some sliced almonds in there as well
or - cold string beans, with sliced red onion, garlic and balsamic vinegar - marinate that for a little bit in the fridge before serving
or - cold string beans, with garlic powder, sliced red onions, and the 4 seasons dressing that comes with the packet and the glass bottle and you mix the water and O&V
I like fried cauliflower as well, but I use egg and then dip in bread crumbs,
I wonder if you can just use water and dip in the breadcrumbs?

I love roasting asparagus.
Preheat oven to 400. drizzle asparagus with olive oil...let bake for 15 min. Take out of oven and sprinkle with parm. cheese, put back in oven for 1 min.
Done and Yummy.

DH is picky about veggies. I try to mix up how I cook them. Cauliflower is the main veggie that I make.
steamed with just some salt and pepper, sometimes a little garlic
Cauliflower mashers which I mix some toasted garlic and shallotts. Or some parm cheese (I know you said no dairy)
Sauteed in the pan after I cook whatever I'm cooking (this way they get the flavor from the jucies left over)
I love it fried, but to keep it healthful, I will lightly coat them in breadcrumbs and bake them instead

i like to boil broccoli VERY briefly, then transfer to a saute pan and cook with garlic and a little oil. easy and yummy!

Have you tried spaghetti squash? This is my alternative to pasta. Once cooked the spaghetti squash actually looks like angel hair pasta. YOu can do so many variations with spaghetti squash. You can just top it with your favorite marinara sauce or you can make a casserole. I dont like it too soft...I like it a little al dente.
Cooking method 1 (oven): Cut squash in half (remove seeds) and cook it face down on a baking sheet at about 375 for about 40 minutes, or just throw it in there whole for a longer time, but the timing and temperature depend on the size of the squash, your oven, and your patience. Use fork to scrape the insides of squash to form strands. Place in large bowl.
Cooking Method2 (microwave):
PIERCE squash several times with fork or sharp knife to allow steam to escape. Microwave on HIGH 12 min. or until tender, turning over after 6 min. Let stand 5 min.
CUT squash in half. Remove and discard seeds. Use fork to scrape insides of squash to form strands; place in large bowl.
Do a search and you will find a lot of reicipes
