How do you store cheese?

I love to buy the wedges of fresh parm and shred as I need it. It always goes bad no matter what I do.

What about other softer cheeses like cheddar?

How long are they supposed to last? I always get mold in a week and I thought cheese was supposed to last a long time?

parm definitely shouldn't be going bad so quickly!

how do you store it? try wrapping it in parchment paper and then sticking it in a plastic baggie.

Yeah, stay away from plastic wrap or plastic baggie touching the cheese. Wrap it in paper first.

My mom is a Parmigiano cheese expert...its a sin in her eyes to let ANY cheese go bad

she ALWAYS wraps in wax paper. Depending on the size, she may than put it in a baggie, but usually she just wraps it tightly in wax paper.

Ah thank you wise ladies, had NO idea about the paper! I always wrapped the hell out of it with plastic.

DH is known to eat some and then not rewrap it tightly. Here I have been blaming him.

I will try the paper trick.
