How to keep pureed peaches/pears from turning brown?
Is there a secret to keeping pureed fruit especially fresh peaches or pears from turning brown. My daughter wants to make a big batch & freeze? Is it safe to add ascorbic acid like Fruit Fresh to prevent browning?

if you make & freeze immediately, it shouldn't brown that much. you can always add a little lemon, but as long as it tastes fine who cares what color it is!

Its oxygen that makes the fruit turn brown, so not sure how much can be done to avoid it. Mb not use such ripe fruit. I really have never had much of my fruit turn brown when I made large batches once it was frozen. Bananas always did bc I would just mash and serve. Anyways to answer your question about adding something to prevent it. No I wouldn't add anything like that stuff you mentioned. I wouldn't add it to my own food so I def. wouldn't add it to my childs. I have tossed fruit with lemon juice, like pp said.

When i steam pears they don't turn brown even when I just put them in the fridge. I haven't tried peaches since they are not in season and not sweet.
