How to "Skinny" this recipe???

So last night I made this incredible dessert and send it in with DH to work. www.laurenslatest.com/lemon-cheesecake-creme-brulee-bars/ (I used lime instead of lemon).
Lemon Cheesecake Creme Brulee Bars
yield: 16 squares
Print This Recipe Print This Recipe

Ingredients:
1/2 cup softened butter
1/2 cup granulated sugar
1 cup all purpose flour
1/2 teaspoon vanilla extract
8 oz. softened cream cheese
1-14 oz. can sweetened condensed milk
1 egg
2 tablespoons lemon zest
6 tablespoons lemon juice
5 tablespoons fine granulated sugar for brulee-ing, approximately

I want to try to "Skinny" it up. I know I can use FF cream cheese and splenda. I don't mind the 1 egg. What can I use instead of sweetened condensed milk? And I was thinking instead of the shortbread on the bottom, to use a FF graham cracker crust...but how would that bake with the cheesecake?

Maybe review some of these recipies for some ideas

I saw one that used low fat greek yogurt and another that used fat free cool whip.

I often replace:

butter with light butter
cream cheese with light cream cheese
condensed milk with fat free condensed milk

butter might be hard... but the other 2 I do all the time in baking.

Thanks for the link. Chat Icon Chat Icon Chat Icon Chat Icon

In my head I thought I could use cool whip but had no facts to base that on. Chat Icon
