Hungry Girl - Amazing ate-layer dip
Wanted to post since a couple of people have asked for this. This is by far the BEST dip I have ever had. I always get compliments, ppl always ask me to make it and it is usually gone with the exception of ppl licking the bowl
No, but seriously, it is DELICIOUS
Per serving (1 cup) 105 calories, 0.5g fat, 4g fiber, 19g carbs
Ingredients:
4 cups shredded iceberg lettuce 2 1/2 cups peeled and cubed butternut squash 2 cups cherry tomoatoes, chopped 1 cup diced onions 1 cup canned black beans 4oz ground beef style soy crumbles, thawed if previously frozen 4oz roasted red peppers, chopped 1/2 fat free sour cream 1/4 cup shredded fat free cheddar cheese 3 1/2 tsp taco seasoning mix, dry optional: salt, pepper, lime juice
Directions:
Combine half of the tomatoes with all of the onions. Season to taste with salt, pepper and lime juice if desired. Set aside
Next, nuke squash in a covered, microwave safe dish with 2 tablespoons of water for 6-7 minutes, until squash is tender enough to mash.
using a fork, mash squash to a pulp. mix in 1 1/2 tsp of taco seasoning and set dish aside.
Combine soy crumbles with the remaining tomoatoes and 2 tsp of taco seasonin, in a heated pan sprayed with nonstick spray. Cook over a medium flame, stirring occasionally until heated and mixed.
In a large dish, layer ingredients in this order: lettuce, butternut squash, tomato/onion mixture, sour cream, black beans, "meat mixture" , shredded cheese, peppers
Makes 6 servings
* I am not a fan of peppers, so I have always left them out of this recipe.
