I remembering watching Paula Dean on the cooking channel once and she made fried chicken with smashed potato chips. It looked unbelievably good, but I'm sure not very healthy. let me see if I can find the recipe on line.

Re: I am dying for fried chicken!!! Does anyone have an oven recipe?
take chicken parts and rinse, leave on skin, put in a ziploc or bowl flour, paprika, garlic powder, salt , pepper, coat and put in non stick pan. Bake in over till cooked thru, oven fried chciken! I got this from a Disney cookbook from years ago- it was called Merlins Magical fried Chicken. HTH
PS I would bake at 400 degrees
