Re: I am having my first holiday!!
How many people are you having? On Thanksgiving I made a turkey breast and it was so easy b/c it had a timer and I just put two pieces of bacon on top and that gave it really good flavor.

You will be fine!! Have fun!!
I hope your mom is ok!!
PS..Off topic..John is engaged!!
ETA: Costco makes EXCELLENT stuffed salmon. It's fresh and you only have to cook it for about 45 minutes. I always make it with a salad, rosemary potatoes, and asparagus.

Re: I am having my first holiday!!
So am I, Kathleen! I bought a 13 pound turkey (not many of the family likes Ham/Lamb, and beef was too expensive). I'll be making mashed whipped potatoes with stuffing, and french cut green beans. Good luck!

Re: I am having my first holiday!!
Hi Kathleen! I give you credit! I am so afraid of hosting a holiday!!!
I have made a roast chicken before - it was very easy and came out great! FM me if you want the recipe...
You could do a smaller roast chicken and the stuffed salmon Jozie recommended... I like to do 2 main dishes to give people a choice.
I also have a very good zucchini quiche recipe if you want it!
's for your Mom!

Re: I am having my first holiday!!
You can do a turkey, pork roast, roast beef, chicken.
Ivaronni Brothers in lake success has great pork roasts. All you have to do it stick it in the oven. It's so easy and soo tasty!! That with some potatoes, a salad and maybe another side dish is perfect!
