I am in charge of desserts for Easter
We are going to DHs family and there will be 14 adults and my two 16-month olds. It will be very casual, like a brunch/lunch buffet type thing. So far I was thinking of making some cute Easter-y cupcakes, plus Nutter Butter truffle balls. Do I need to make a whole formal cake or is that unnecessary? Are cupcakes and the truffle balls enough? Do I need a third thing?
ETA: I think I need something from the fruit category. Like a pie or mini tarts or something?

Re: I am in charge of desserts for Easter
It's exactly the same as the Oreo truffle recipe that's floating around here - just sub in a package of Nutter Butters for the Oreos. So basically a package of Nutter Butters ground up in the Cuisinart, mix with a bar of cream cheese, roll into balls and chill, then dip in melted chocolate.

Re: I am in charge of desserts for Easter
You can do chocolate covered fruit! I saw a great looking platter for an easter dessert in a recipe magazine and it was 4 different kinds of fruit half dipped in chocolate (strawberries, bananas, i think there were dried apricots and i can't remember the 4th) and in between each fruit were those marshmallow easter peeps (the chicks and the bunnies) also half dipped in chocolate. its a quick and easy platter you can put together since you are already making cupcakes and truffles and it includes fruit and an easter theme!

I made the sunflower cake last year...once you put the peeps down, leave them down.... they don't come up well.

Re: I am in charge of desserts for Easter
I think that's plenty there but if you want something easy and fruity- what about trifle?
