I have a house full of potatoes

the small round ones (from my csa) any ideas on what I can do with them besides mashed and roasted?

Potato Frittata (with anything added)

Potato, sausage and broccoli (with a little EVOO and garlic)

Boil Potato then add to frying pan with butter, salt and parsley

Hash Browns - diced potatos, cubed ham, onions and cheese

I love the potato frittata idea. I would add onion and a little crumbled pancetta! Sooo delicious with a nice green salad!

We love handcut french fries in this house - and no chip is as good as a homemade potato chip! Serve THOSE with some burgers!

You can also make croquettes or day after potato pancakes or scalloped potatoes or duchesse potatoes!

potatoe lasagna,,

the potato serves as the actual pasta..


a lil evoo on th bottom of a baking dish & then
you slice the potatoes very thin , like chips, layer the bottom of a baking dish with them
then sprinkle , pepper , grating chesse, whatever type of herb you like,
then another layer of potatoe's & then more herbs.

continue this until you feel its thick enough for your liking..

Put in a 375- 400 oven & bake until the top browns,

cut like you would lasagna.

omg its sooo sooo sooo good

Potato Salad! I love this as a side for summer and so many different ways you can make it.
