I just experienced heaven in the form of a salad!
Holy good salad! I put together a great salad with lots of veggies and I usually make a balsamic vinegar and olive oil dressing, but instead I used avocado to replace the olive oil. Holy crap! Talk about a salad!  It was delish. Just had to share. Carry on!

Yum!!! I am always caught off guard by a super delish salad -- I just discovered chopped salads from Europa Cafe.

There's one in the empire state building it opened about a month or so ago. I never heard of Europa Cafe before then so I don't know when the chopping began. It's the dumbest thing but it makes such a big difference - everything is bite sized.

Yup! Creamy balsamic dressing. I'm still happy over it
As for chopped salads...THEY ROCK. Ha! Well, I guess they WOULD rock if a salad COULD rock
