I made the 'Rainbow Cupcakes'... PSA... Looked good, tasted like nothing [with pic]
I never make things from a box but I thought 'how bad could it be'. The recipe used 'white' cake mix. They just kinda tasted like nothing. If I did it again I would try using a vanilla cake instead of 'white' and maybe use the vibrant food coloring since the vanilla cake has a little yellow tint to it... but they looked really cool! The recipe says to 'frost' with whipped cream so it looks like a cloud, which I did, and i decorated with a foil wrapped chocolate coin. The whipped cream is just a subtle sweet so that prob added to them tasting like nothing, maybe if I used vanilla or cream cheese frosting it would have had more taste.
I actually used too much batter in the first 3 layers & ran out of room so i had to leave out the orange layer. It was about 3/4 cup batter per tin, I didn’t measure how much I put in each cupcake thingy, I just tried to use enough batter to completely make a layer and that was I guess too much. I just used regular food coloring:
Purple: 9 red and 6 blue drops
Blue: 12 drops blue
Green: 12 drops green
Yellow: 12 drops yellow
Orange: 12 yellow and 4 red drops
Red: 18 drops red
Anyway, thought I would share my experience, I had noticed people talk about rainbow cupcakes on parenting.

They look great!!! You can always doctor a cake mix recipe by adding extra vanilla extract or even better, actual vanilla beans. That really kicks it up a notch, though there's nothing quite like cake from scratch. You could always do this with any scratch vanilla cake recipe, too!

they look great! i wonder if a yellow cake mix would take the dye. it might taste better too.

It definitely does. Though you might need more dye to get the color you want.

Yup, I love adding lots of vanilla. Fresh lemon juice and zest is also good.

that looks good! i add vanilla extract to sweet stuff that isn't tasty enough, like boxed cake & french toast. yum.
