I need a really good tomato sauce recipe
I used bobby flay's recipe that I found on foodnetwork.com and it did not come out good at all. This was my 3rd attempt! Please tell me your recipe along with exact measurements. I want to make good sauce! Also, what can I do if I over sugared the sauce? Is there anything I can add to it to fix it?

I jar my own sauce and Ii am picky. I have to say--the only cans I will buy is Scalfani crushed tomatoes. I hate that metal tin taste from most brandsand I do not believe in sugaring my sauce! If the tomatoes are good there is no reason jmho... Exact measurements...hard but I will try.
4 cans crushed scalfani tomatoes 3/4-1 head garlic. Not minced--sliced thin. The smaller you mince the stronger the flavor.
Saute garlic in Olive oil, if you add onion- I add a sweet onion sometimes.. dice it also and add to olive oil add meat if you want, bracciole, whatever--until browned on sides then add tomatoes. If not meat then Just saute garlic until softened and add tomatoes. Salt and pepper to taste. fresh ground pepper-red pepper and always onlyuse kosher salt. Go lightly-you can always add--its harder to take away. Add a small hand of slivered basil. cook on low to taste or until meat is cooked. Scalfani tomatoes if no meat is added also taste good pretty much immed. No reason to cook for 10 hours.lol Hope I helped somewhat.

thanks so much! I'll try yours. I hate sugar in the sauce too, it was DH's idea. I knew listening to him was a bad thing.

I never sugar my sauce. I use Tutorossa (sp) crushed tomatoes. Lots of Meats in the sauce. Meatballs, sausage, any left over meats also go into it. Then all then normal ingredients..garlic basil oregano...etc.
Don't have the recipe with me at work.. but meat is the key to my sauce/gravy (as some Italians call it)

I try to use Tuttoroso if I can find it.
1 28oz. can of Puree 1 28oz. can of whole tomatoes 2 6oz. cans of tomato paste garlic powder (or fresh garlic) to taste 7 - 8 fresh basil leaves (whole) pepper to taste
First, I put a little olive oil in the bottom of a large pot. Then, use a blender to puree the whole tomatoes. Add that to the pot with about 2 tablespoons of water to rinse out the can with. Then add the can of tomato puree. Add both cans of tomato paste, along with 2 cans full of water (6 oz. cans). Add basil leaves, about 5 or 6 turns of fresh ground pepper, and about 5 or 6 shakes of garlic powder (or 3 cloves of chopped garlic).
Simmer on low heat, covered, for 2 hours. After the first hour, I taste it to see if it needs anymore seasonning.
I usually add chopmeat and/or sausage to the sauce as well.

I like a lot of garlic...my mother minces, I slice thinly. I also use onion which I chop finely. I only add oregano if I am making pizza sauce...I dont like the flavor in my regular sauce. I use fresh basil and parsley and a sprig of thyme...I NEVER add sugar to my sauce I dont like a sweet sauce.
My sauce comes out best when I throw three sausage links in while sauting the garlic and onion...measurements...uh...i dont know...lets see...
saute small chopped onion with three browned sausage links...then add garlic (onion takes longer to cook than the garlic) dont overcook the garlic or it will make your sauce bitter. When garlic just sarts to turn golden...throw in your crushed canned tomoatos. Throw in your spices, and simmer...you dont have to cook it that long...oh...salt and pepper...taste it....yummy...
