I need another side dish...(thanksgiving)
here are my sides:
Pillsbury crescent rolls & dinner rolls pumpkin bread Stuffing - meatless & sausage Sweet potato casserole Classic mashed potatoes A tray of roasted veggies (asparagus, mushrooms & roasted peppers) Cranberry sauce Stuffed Mushrooms Pinapple casserole
I don't want to do a green bean casserole but I want to add another "green" recipe, a veggie, maybe corn ?
Anyone got a delicious idea?! TIA!

I make this ALL the time... It's so good.
Zucchini Pie
3 cups grated zucchini (usually 3 small zucchini) 1 small yellow onion 1 cup flour (I use whole wheat flour) 1 cup of cheese (any kind—I also use part skim to keep calories down) 3 eggs or Egg Beaters ¼ cup of oil (I use olive oil) ¼ cup of grated parmesan (reserve 1 tablespoon for top) 2 teaspoons of basil or oregano, whatever you want 1 teaspoon baking powder 1 teaspoon salt ¼ teaspoon ground pepper
Pre-heat oven at 350 degrees. Grate zucchini and allow to drain all the water out. Mix dry ingredients, then wet ingredients and combine everything together. Baked for 45 mins or so at 350 degrees. Sprinkle the last bit of parm cheese on top when you take the pie out of the oven.

roasted brussel sprouts. Just layer them on a cookie pan and cover w/ olive oil, salt, pepper and garlic cloves.

i would do something plain like green beans (not even the casserole). everything you have is really heavy and rich. i would stay away from corn because you have enough starchy things already.

My favorite recipe and gets ALL the raves
I found this on allrecipes.com
INGREDIENTS 1 butternut squash- peeled, seeded and cubed 1/2 cup mayonnaise 1/2 cup finely chopped onion 1 egg, lightly beaten 1 teaspoon brown sugar salt and pepper to taste 1/4 cup crushed saltine crackers 2 tablespoons grated Parmesan cheese 1 tablespoon butter, melted
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a large pot, bring the squash to boil. Reduce to a simmer until squash is soft. In a large bowl, mash the softened squash. Mix in the mayonnaise, onion, egg, brown sugar, salt and pepper. Pour the mixture into a 2 quart baking dish. In a medium bowl, mix together crackers, Parmesan and butter. Sprinkle over the squash mixture. Bake uncovered in the preheated oven for 35 to 45 minutes, until the topping is lightly brown.
I double the cracker mixture to put on top. It has a quiche-like quality about it.
I've also substituted sweet potato for the squash and they both tasted great

I usually stem a cauliflower spritz it with oil or butter then put a little breadcrumbs and garlic salt on top and bake it for like 15-20 min.
