I need Chicken Dinner Recipes
I am not following any diet - but I am trying to watch what I am eating.
I want to start incorporating more chicken dishes into my family's diet.
Can you tell me your favorite Chicken Dinners that you have while dieting or watching what you are eating.
And if you can post the recipe, that would be great!
Also if there is a post out there already with this - can you please bump it for me

How about just breading a boneless chicken breast and baking it in the oven. I do that maybe once a week or once every other week.

Make this all the time:
Chicken Marsala POINTS: 4 INSTRUCTIONS
2 tsp olive oil 1 cup mushroom(s), fresh, sliced 1 pound uncooked boneless, skinless chicken breast, four 4 oz pieces 1 tsp dried thyme 1/2 tsp table salt 1/4 tsp black pepper 1/2 cup wine, Marsala variety 1 1/4 cup canned beef broth, reduced-sodium, divided 1 1/2 Tbsp cornstarch
Heat oil in a large skillet over medium-high heat. Add mushrooms and sauté until tender and releasing liquid, about 5 minutes.
Meanwhile, place chicken on a plate and season both sides with thyme, salt and pepper. Move mushrooms to outer edge of skillet once cooked. Place chicken in center of skillet and sauté until golden, about 2 to 3 minutes per side.
Add wine to skillet; simmer 1 minute. Add 3/4 cup of broth and simmer, uncovered, until chicken is tender and cooked through, about 8 minutes.
Dissolve cornstarch in remaining 1/2 cup of broth in a small bowl; add to skillet. Simmer until sauce thickens, stirring constantly and incorporating mushrooms into the liquid, about 1 minute. Serve chicken with mushroom sauce spooned over top. Yields about 3 ounces of chicken and 1/3 cup of sauce per serving.

Chicken with Garlic Sauce (Serves 4)
Ingredients 1 tsp paprika 1 tsp dried thyme 1/2 tsp dried rosemary 1/2 tsp table salt 1/4 tsp black pepper 1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces 1 tsp olive oil 12 medium garlic clove(s), halved 1 cup fat-free chicken broth, reduced-sodium, divided
Instructions Preheat oven to 450°.
Combine first 5 ingredients in a small bowl. Sprinkle both sides of chicken with herb mixture.
Heat oil in a large ovenproof nonstick skillet over medium-high heat. Add chicken, and cook 2 minutes on each side. Add garlic and 3/4 cup broth. Place pan in oven. Bake at 450° for 10 minutes or until chicken is done and garlic cloves are soft.
Remove pan from oven. Transfer chicken to a platter; keep warm. Add remaining 1/4 cup broth to pan. Mash garlic with a fork. Cook garlic mixture over medium heat 2 minutes or until thoroughly heated; stir. Serve garlic sauce over chicken. Yield: 4 servings (serving size: 1 chicken breast and 2 tablespoons garlic sauce).
Balsalmic Chicken and Mushrooms
Ingredients 2 tsp vegetable oil 3 Tbsp balsamic vinegar 2 tsp Dijon mustard 1 large garlic clove(s), crushed 1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces 2 cup mushroom(s), small, halved 1/3 cup canned chicken broth 1/4 tsp dried thyme, crumbled Instructions In a nonstick skillet, heat 1 teaspoon of oil.
In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.
Transfer chicken and marinade to skillet. Sauté chicken until cooked through, about 3 minutes on each side. Transfer chicken to a platter and keep warm.
Heat remaining teaspoon of oil in skillet. Sauté mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.
Serve chicken topped with mushrooms.

What about chicken cattiatore? Just chicken with cut up peppers and onions with tomato puree. It's delicious over brown rice pasta, which BTW if you've never had is delish!
