I Need Easter Side Dish Help...
Ok ladies....for the main course we are making filet mignon and ham. There are about 15 of us.
So far I for sides I have:
mashed potatoes
green bean casserole
asparagus
salad
I need more...maybe something yellow but i don't want just plain corn....any suggestions??

how about glazed carrots?
eta: I will be making this recipe, seems simple enough:
2 (16 ounce) packages baby carrots
1 cup water
1/4 cup and 2 tablespoons butter or margarine
1/4 cup brown sugar
2 tablespoons Dijon mustard
1 teaspoon ground ginger
1/2 teaspoon salt
DIRECTIONS
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 servings.
In a saucepan, bring carrots and water to a boil. Reduce heat; cover and cook for 10-12 minutes or until tender. Drain. Place carrots in a serving dish and keep warm. In the same pan, melt butter. Add brown sugar, mustard, ginger and salt; cook and stir over medium heat until sugar is dissolved. Pour over carrots and toss to coat.

sauteed mushrooms and onions would go nice with the filet..either shitake or baby bellas.
