I peeled and cut the potatoes last night. Do I..
use the same water that I used when I refrigerated them or dump and use fresh? I'm not sure if the starch in the water is a good thing or a bad thing?

Are you boiling them? I would use clean water...
Thats what I do with my Roast Potatoes and they come out delish! You can also use the starchy water as an additive if you choose to make your own paper.

I save the cooking water (about a cup) in case I need more liquid later when I mash them.

thanks ladies! I maked mashed potatoes often but never prep the night before. I used fresh water and they were perfect! Thanks again!
